Creamy white cheddar gnocchi


I remember watching the cooking channel and there it was this glorious thing which resembled pasta and as a pasta fan I knew I had to try it out. I made it with some baby spinach, mushroom and white cheddar cheese as I would with my pasta dishes you can use Parmesan as well but white cheddar is just as good for me, here’s how it went.



2 medium potatoes

250 ml flour

1 egg



1 onion, chopped

1 Garlic clove, minced

2 cups / 500 ml Baby spinach

2 cups/ 500 ml mushrooms, sliced

250 ml Fresh cream

125 ml white cheddar cheese, shredded

Salt and pepper to taste


Bring water to a boil in a medium saucepan. Place the potatoes in the saucepan and cook till tender. Once cooked, drain, cool and peel the skin off. Mash with a fork or potato masher.

Measure 250 ml of mashed potato. Combine with flour and egg. Knead until the dough forms a ball. Cut the dough into four portions. Roll out using your hands into long strips. Cut about 1.5 cm pieces. To form a pattern press lightly onto a fork.


Bring a medium pot of salted water to a boil. Drop the gnocchi in and cook till they start rising to the top 5-10 minutes.



Heat oil in pan over a medium heat. Add the onions and garlic sauté till softened. Add mushrooms and saute till softened as well.

 Add fresh cream stir in spinach and cook till wilted. Stir in white cheddar cheese.

Add cooked gnocchi to the sauce. Stir to combine add salt and pepper to taste.


And serve :).
