Breakfast flatbread


Hi there fellow blog mates. Life has been happening hey for those trying to find a balance in life I’m sure you understand:). Anyway I got some time to make breakfast the other day, I actually woke up craving pizza which lead me to make something a little more healthier but still along those lines. This was surprisingly really good since I’m always winging it half the time, i’m sure you’ll love it too. One slice really filled me up so this is actually good for sharing:)


Flat bread

375 ml / 1 1/2 cup cake flour

5 ml baking powder

5 ml white sugar

pinch of salt

15 ml vegetable oil (canola)

180 ml liquid ( half water , half milk)



4 eggs

500 ml / 2 cups spinach, shredded

5 ml garlic, crushed

30 ml/ 2 tbsp fruit chutney

4 cherry tomatoes, halved

1 slice, red onion

mozzarella cheese

salt & pepper


Mix the flour, baking powder, sugar and salt. Add the oil, water and milk to the dry ingredients.

Knead the dough till nice and smooth. Place in a bowl and cover with a cling wrap and let it it rest for 15 minutes.

Melt butter in a sauce pan, add garlic and spinach. Allow the spinach to wilt slightly then add the eggs. Scrambled the eggs mixing with spinach (Don’t over cook). Set aside.

Roll the dough with a roll pin (not too thin). Place on a greased baking tray and bake for 10-15 minutes.

Remove the flat bread from the oven, spread chutney on the base, spread the egg and spinach over the base. Top with cherry tomatoes, red onion and mozzarella. Season with salt & pepper.

Bake for another 10 – 15 minutes till edges are nice and golden brown.
