Beef stew and dumplings

My dads favourite meal. I really enjoy this hearty home cooked meal especially in winter, i’m sure you will too 🙂

800 g Beef, cubed

1 Onion, chopped

1/2 Yellow pepper, chopped

5 ml/ 1 tsp Garlic, minced

5 ml/ 1 tsp Paprika

10 ml / 2 tsp Curry powder

10 ml/ 2 tsp Mother in law

10 ml/ 2 tsp Barbecue spice

5 ml/ 1 tsp Turmeric

2 Beef cubes

750 ml/ 3 Cups water

2 bay leaves

2 Carrots, sliced

6 Baby Potatoes, halved

100 g Tomato paste

30 ml/ 2 tbsp Brown onion soup

500 ml/ 2 cups Cake flour

10 ml/ 2 tsp Baking powder

100 g Margarine

In a large pot, fry beef in oil over medium heat until brown. Remove the beef from the pot and fry the onions, pepper, garlic and spices.

Then add back the beef and combine with onion and spices. Stir in the bay leaves, beef cubes and water. Bring to a boil, then reduce heat, cover and simmer 1 hour.

Once the beef is tender. Stir in the tomato paste, potatoes and carrots.

Dissolve brown onion soup in 2 tablespoons of cold water and stir into stew. Cover and simmer for 10 minutes.

Dumplings: Combine the dry ingredients then rub margarine in until it resembles bread crumbs, add some salt and enough water to form a stiff dough.

Divide the dough and drop the dumplings into the stew. Cover and simmer until fluffy and cooked for about 15- 20 minutes.
