Chocolate Oat Crumpets

Chocolate oat crumpets make a great breakfast, lunch snack or dessert when served with ice cream. They can be a great substitute for a gluten free meal if you exclude the self raising flour and double the amount of oats:) Easy and quick to make.

Ingredients

125 ml/ 1/2 Cup Oats

125 ml/ 1/2 Cup Self raising flour

2 Eggs

2 Bananas

10 ml/ 2 tsp Cocoa powder

5 ml/ 1 tsp baking powder

2.5 ml/ 1/2 tsp cinnamon

To serve: Chocolate ganache, fresh fruit or maple syrup

Method

1. Place the oats in a blender and blend till fine. Add the self raising flour, eggs, bananas, cocoa power, baking powder and cinnamon.

2. Allow to blend until the mixture is smooth. Allow the batter to stand for 10 minutes until thickened slightly.

3. Heat a non stick pan and pour small amounts into the pan. Turn and cook the other side when bubbles start to form on the surface of the crumpets.

4.Serve with fresh fruit and chocolate ganache or maple syrup.
